Carrot Ideas for Breakfast

Cup of carrot juice

1 cup of cooked, mashed carrots combined with Splenda, ground cinnamon and a splash of Parkay no calorie butter spray makes a delicious sweet addition at the breakfast table.

The mixture can also be spread onto toast OR try topping the mashed carrots with a few mini marshmallows.

Carrot Ideas for Lunch

Carrot Soup - Puree three cooked carrots until smooth. Add a bit of pumpkin pie spice and a shot of Parkay no calorie butter spray.  Add a bit of Splenda. Add 1 cup of skimmed milk and heat until warm.

Shred one potato and one carrot. 'Fry' in a non-stick pan using no calorie butter-flavored cooking spray.  Makes several 'vegetable pancakes' for about 150 calories.

Carrot Ideas for Dinner

Steam or boil carrots then serve with Parkay no calorie butter spray for a simple diet dish.

Place 1 bag of whole carrots into the bottom of a baking pan. Add an onion cut in half.  Add several small whole potatoes.

Salt, then pepper.  Next, top with one small roast that has been seared on top of the stove until the edges are golden brown.

Cover with foil and bake until done.  Carrots will be candied and are absolutely delicious!

Carrot & Raisin in the Sun Salad

Ingredients for this low calorie, low fat recipe are:

2 carrots - grated
1 Tablespoon of dark or golden raisins
1 Tablespoon of Light Mayo
1 teaspoon of Splenda

Mix together and chill thoroughly.

Calories: Serves 2 for about 50 calories each.
